  Ogni qualvolta si parla di vino ai suoi massimi livelli, il riferimento alla Francia ed alle sue etichette mito, ma più in generale a quei territori (Champagne, Bordeaux e Borgogna) che rappresentano il Sacro Graal di ogni bevitore, è scontato oltre che sacrosanto. Con buona pace di quelli che – probabilmente a digiuno di vini francesi – contestano tale visione, trincerandosi dietro frasi del tipo: “A me lo Champagne non piace. E poi, vuoi mettere con i nostri Franciacorta, che costano la metà e sono buono il doppio?” oppure “I vini di Borgogna? Sopravvalutati ed eccessivamente costosi. Spesso esili, scarichi e senza struttura.” Come al solito, la realtà è assai più complessa delle frasi fatte o dei luoghi comuni, a prescindere da dove stia la verità, qualora questa esistesse e fosse unica ed inequivocabile.
